Grilled Chicken, Veggie, and Fruit Kabobs

Preparing fresh food with the kids - healthy eating educationYou will need the following ingredients:

 

  • Chicken breasts
  • Yellow squash
  • Onion
  • Cherry tomatoes
  • Red bell pepper
  • Green bell pepper
  • Peaches
  • Pineapple
  • Balsamic vinaigrette

 

Instructions:

  1. Cut up chicken, veggies, and fruit to make skewer-ready and marinate everything in your favorite balsamic vinaigrette for at least 2 hours before cooking.
  2. Skewer each food item together to assure that everything gets cooked thoroughly and completely (since cooking times will vary depending on the food – i.e. chicken will take the longest to cook).
  3. Brush skewers with olive oil and grill till done (the safe internal temperature for cooked chicken is 165 degrees Fahrenheit).
