Grilled Chicken, Veggie, and Fruit Kabobs
You will need the following ingredients:
- Chicken breasts
- Yellow squash
- Onion
- Cherry tomatoes
- Red bell pepper
- Green bell pepper
- Peaches
- Pineapple
- Balsamic vinaigrette
Instructions:
- Cut up chicken, veggies, and fruit to make skewer-ready and marinate everything in your favorite balsamic vinaigrette for at least 2 hours before cooking.
- Skewer each food item together to assure that everything gets cooked thoroughly and completely (since cooking times will vary depending on the food – i.e. chicken will take the longest to cook).
- Brush skewers with olive oil and grill till done (the safe internal temperature for cooked chicken is 165 degrees Fahrenheit).
